NO BAKE CHEESECAKE

Ingredients:

For the crust….

(1⅓) Cups of Graham Crackers (ground)
(2) Tbsp. Granulated Sugar
(6) Tbsp. Butter

For the filling….

(¾) Cup of Heavy Cream
(½) Cup of Sour Cream
(1¾) Cups of Cream Cheese
(2) Tsp. Vanilla Bean Extract
(¾) Cup of Powdered Sugar
(¾) Tsp. Lemon (zest)

For garnishing….

(1) Cup of Strawberries (diced) & (3) Whole Strawberries (halved)
(6) Mint Leaves

Step-by-step process:

For the crust….

Step 1: Grind the whole graham crackers
Step 2: Melt the butter
Step 3: Combine the graham cracker grind, melted butter and granulated sugar in a mixing bowl
Step 4: Mix well to ensure the butter and granulated sugar have been distributed evenly

For the Cheesecake filling….

Step 1: Combine the heavy cream, sour cream, cream cheese, vanilla bean extract, powdered sugar and lemon zest in a mixing bowl
Step 2: Mix well to ensure the filling is fluffy and smooth

For plating….

Step 1: Add 4 tbsp. of the graham cracker mix to a glass
Step 2: With a spoon, pat down the graham cracker mix making it as firm as possible
Step 3: Add a 1-inch layer of the cheesecake filling over the graham cracker base
Step 4: Add a 1 cm layer of diced strawberries over the cheesecake filling
Step 5: Add a 1-inch layer of the cheesecake filling over the diced strawberries

*Note*

  • Repeat the same process in approximately 5 glasses
  • Chill for 3-5 hours before serving

For garnishing….

Step 1: Place a halved strawberry at the edge of the glass
Step 2: Place a mint leaf beside the halved strawberry
Step 3: Sprinkle a bit of the graham cracker mix
