Quinoa Salad ‘SHARMA’ Style


(1) Cup of cooked quinoa
(½) Cup of dried cranberries
(½) Cup of chopped red onion
(½) Cup of chopped english cucumber
(½) Cup of chopped green pepper
(½) Cup of chopped red pepper
(½) Cup of chopped orange pepper
(¼) Cup of chopped dill leaves
(¼) Cup of chopped cilantro
(1) Lemon
(3) Tbsp. olive oil
(3) Tsp. red chili powder
(½) Cup of crumbled goat cheese

Salt & black pepper to taste


To cook the quinoa….

Step 1: In a wide pan, add in 1 cup of Quinoa.
Step 2: Add 3 cups of water.
Step 3: Cover the pan with a lid and allow the quinoa to cook on a medium fire.

While the quinoa cooks....

Step 1: In a large dish, add in the dried cranberries, chopped red onion, english cucumber, green, red and orange pepper, dill leaves and cilantro.
Step 2: Squeeze the juice of one whole lemon into the veggie mix.
Step 3: Add in red chili powder.
Step 4: Add in salt and black pepper to taste.
Step 5: MIX it altogether.

Once the quinoa is cooked....

Step 1: Strain out the quinoa from the water, if any.
Step 2: Spread the quinoa in a large plate and drizzle with olive oil.
Step 3: Allow the quinoa to cool.

Once the quinoa is cool….

Step 1: Gently fold the quinoa into the veggie mix.
Step 2: Top it with crumbled goat cheese.
